This past summer I had the immense pleasure of teaching cooking classes to some wonderful folks who are part of the Wounded Warrior Project.
We all had a great time laughing and doing some serious cooking. Most classes we would start with a theme, sometimes even recipes. Every class added a healthy dose of spontaneous recipe creation.
The following is a collection of our recipes. They are organized into categories; chicken, fish, pork, Mexican flavor profile and Chef’s secret recipes (includes Mole’ and my infamous Bean and Barley Salad).
Included also are tips on making stock, cutting up a chicken, and cooking en papillote.
